Description

Ingredients

  • 1 can white beans (e.g., cannellini or Great Northern), rinsed and drained
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Toss in the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Add the minced garlic and dried thyme, cooking for another minute.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Once it’s boiling, stir in the white beans and spinach. Lower the heat and let it simmer for 10-15 minutes.
  5. Season with salt and pepper according to your taste preferences.
