Description

A hearty and meaty chili that is perfect for chilly evenings or festive gatherings, made without beans to highlight rich flavors.

Ingredients

Scale
  • 2 pounds ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes, undrained
  • 1 can (6 ounces) tomato paste
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add the ground beef, browning it until fully cooked, about 7-10 minutes. Drain any excess fat.
  2. Add chopped onion and minced garlic, cooking until the onion is translucent, roughly 5 minutes.
  3. Stir in the undrained diced tomatoes, tomato paste, and beef broth.
  4. Mix in the chili powder, cumin, paprika, salt, and pepper.
  5. Bring the mixture to a gentle simmer. Reduce heat to low and cover the pot.
  6. Let it simmer for at least 30 minutes to allow flavors to meld.
  7. Taste and adjust seasoning as needed before serving.

Notes

Serve with toppings like shredded cheese, sour cream, and cilantro. Pairs well with cornbread or tortilla chips.
