Ingredients

  • 1 butternut squash
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the butternut squash, then seed and cut it into cubes.
  3. In a large bowl, combine the cubed squash with the honey, olive oil, salt, and pepper.
  4. Toss the squash until it’s evenly coated with the mixture.
  5. Spread the coated squash in a single layer on a baking sheet.
  6. Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until golden and caramelized.
  7. Serve warm as a side dish.

Notes

For a vegan version, replace honey with maple syrup or agave syrup. Store leftovers in an airtight container for up to 3 days.
