Description

A comforting potato soup infused with cheddar cheese, garlic, and fresh herbs that’s perfect for chilly evenings.


Ingredients

  • 2.5 lbs (about 1.1 kg) Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter OR 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Pinch of cayenne pepper or smoked paprika (optional)
  • Garnish: cooked crumbled bacon, extra shredded cheese, sour cream, more fresh herbs, croutons

Instructions

  1. Peel and cube the Yukon Gold potatoes, then rinse under cold water. Set aside.
  2. In a large pot, melt butter (or olive oil/butter mix) over medium heat. Add chopped onion and sauté for 5-7 minutes.
  3. Add minced garlic and cook for 1-2 minutes.
  4. Sprinkle flour over the onions and garlic. Stir continuously for 1-2 minutes.
  5. Gradually whisk in broth, scraping the bottom for flavorful bits. Bring to a simmer.
  6. Add the potato cubes, stir, and cover. Cook for 15-20 minutes until soft.
  7. Puree half of the soup in a blender, then return to the pot.
  8. Stir in milk and heavy cream, then add herbs. Heat gently for 5 minutes.
  9. Remove from heat and gradually add cheddar cheese, stirring until melted.
  10. Season to taste with salt, pepper, and optional spices.
  11. Ladle into bowls and garnish with toppings as desired. Enjoy warm!

Notes

For a smoother soup, avoid pre-shredded cheese. You can adjust spice levels to preference.
