Description

A comforting and budget-friendly taco soup perfect for busy weeknight dinners and cozy gatherings.


Ingredients

  • lbs ground beef
  • 1 (15.25 oz) can of black beans, drained and rinsed
  • 1 (15.25 oz) can of kidney beans, drained and rinsed
  • 1 (15.25 oz) can of whole kernel corn, drained and rinsed
  • 2 (15.25 oz) cans of diced tomatoes
  • 1 (1 oz) package of taco seasoning (original, mild, or hot)
  • 1 (1 oz) package of ranch seasoning
  • 1 pint or 2 cups salsa
  • 2½ cups water

Instructions

  1. In a large pot over medium-high heat, brown the ground beef until no longer pink. Drain excess fat if necessary.
  2. Add the drained black beans, kidney beans, diced tomatoes, and corn to the pot. Stir to combine.
  3. Pour in the salsa and water, then add the taco seasoning and ranch seasoning. Stir and bring to a boil.
  4. Reduce heat to medium-low and return the cooked beef to the pot. Simmer on low for 15-20 minutes.
  5. Serve warm with your favorite toppings and enjoy!
