- 2 Chicken breasts
- 1 cup Salsa
- 1 can Black beans
- 1 cup Corn
- 1 Avocado, diced
- 1/4 cup Cilantro lime dressing
- 1 cup Rice or quinoa (optional)

- 1/2 cup Sour cream (optional)
Instructions
- Place chicken breasts in the crockpot and generously cover them with salsa.
- Cook on low for 360 minutes, or high for 240 minutes, until the chicken is fully cooked through.
- Once done, shred the chicken and mix it with the juices from the pot.
- In serving bowls, layer rice or quinoa, followed by the shredded chicken, black beans, corn, and diced avocado.
- Drizzle with the cilantro lime dressing.
- Finish with optional toppings like cheese and sour cream.
