Description

Delicious and customizable Chicken Burrito Bowls that transform simple ingredients into a flavorful meal perfect for busy nights.


Ingredients

Scale
  • 2 Chicken breasts
  • 1 cup Salsa
  • 1 can Black beans
  • 1 cup Corn
  • 1 Avocado, diced
  • 1/4 cup Cilantro lime dressing
  • 1 cup Rice or quinoa (optional)
  • 1/2 cup Cheese (optional)
  • 1/2 cup Sour cream (optional)

Instructions

  1. Place chicken breasts in the crockpot and generously cover them with salsa.
  2. Cook on low for 360 minutes, or high for 240 minutes, until the chicken is fully cooked through.
  3. Once done, shred the chicken and mix it with the juices from the pot.
  4. In serving bowls, layer rice or quinoa, followed by the shredded chicken, black beans, corn, and diced avocado.
  5. Drizzle with the cilantro lime dressing.
  6. Finish with optional toppings like cheese and sour cream.

Notes
