Description

A vibrant dish combining juicy grilled chicken and roasted corn, perfect for a quick weeknight dinner or casual gathering.

Ingredients

Scale
  • 2 cups cooked rice
  • 2 chicken breasts (grilled and sliced)
  • 1 cup corn kernels
  • 1/2 cup black beans (drained and rinsed)
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Heat a skillet over medium heat. Add olive oil and sauté the corn kernels for about 3-4 minutes until lightly charred.
  2. Season the corn: Stir in chili powder, smoked paprika, cumin, salt, and pepper. Set the corn aside.
  3. Make the lime crema: In a small bowl, mix together sour cream, lime juice, garlic powder, and salt. Adjust the lime juice to your taste.
  4. Assemble the bowls: Start with a generous base of cooked rice. Top it with sliced grilled chicken, charred corn, rinsed black beans, diced tomatoes, red onion, and cotija cheese.
  5. Finish with lime crema: Drizzle the lime crema over the assembled bowl and garnish with fresh cilantro.
  6. Serve immediately and enjoy the burst of flavors!

Notes

Feel free to mix and match ingredients based on what you have on hand or dietary preferences. For a vegetarian option, omit the chicken and increase black beans or add grilled zucchini.
