- 8 oz pasta (penne or fusilli)
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh basil for garnish
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened—about 3–4 minutes.
- Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 5–7 minutes per side. Remove and slice.
- Add the can of diced tomatoes and red pepper flakes to the skillet. Simmer for about 5 minutes.
- Stir in the heavy cream and bring to a gentle simmer. Add the cooked chicken and pasta to the sauce, tossing to combine.
- Cook for an additional 2–3 minutes until everything is heated through.
- Serve hot, garnished with fresh basil.
