Ingredients

  • 2 chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened—about 3–4 minutes.
  3. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 5–7 minutes per side. Remove and slice.
  4. Add the can of diced tomatoes and red pepper flakes to the skillet. Simmer for about 5 minutes.
  5. Stir in the heavy cream and bring to a gentle simmer. Add the cooked chicken and pasta to the sauce, tossing to combine.
  6. Cook for an additional 2–3 minutes until everything is heated through.
  7. Serve hot, garnished with fresh basil.
