Ingredients
- Chicken (boneless, skinless thighs or breasts)
- Potatoes (russet or Yukon Gold recommended)
- Onion (yellow or sweet)
- Garlic
- Chicken broth (homemade or store-bought)
- Carrots
- Celery
- Thyme (dried or fresh)
- Salt and pepper
- Olive oil
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the chicken and cook until it’s no longer pink (about 5 minutes).
- Pour in the chicken broth, then add cubed potatoes, thyme, salt, and pepper.
- Bring it to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Before serving, shred the chicken into bite-sized pieces and mix well.
