Ingredients

  • Chicken (boneless, skinless thighs or breasts)
  • Potatoes (russet or Yukon Gold recommended)
  • Onion (yellow or sweet)
  • Garlic
  • Chicken broth (homemade or store-bought)
  • Carrots
  • Celery
  • Thyme (dried or fresh)
  • Salt and pepper
  • Olive oil

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the chicken and cook until it’s no longer pink (about 5 minutes).
  4. Pour in the chicken broth, then add cubed potatoes, thyme, salt, and pepper.
  5. Bring it to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
