Ingredients

- 2–3 pounds boneless, skinless chicken thighs or breasts
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 6 cups chicken broth
- 2 teaspoons thyme
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 bay leaf
- Fresh parsley for garnishing
Instructions
- Pour the chicken broth into the crockpot and add the diced onion, carrots, and celery.
- Place the chicken on top of the veggies.
- Sprinkle thyme, minced garlic, salt, and pepper over the chicken.
- Throw in a bay leaf for an aromatic touch.
- Cover and cook on low for about 6-8 hours, or until the chicken is tender.
- Before serving, shred the chicken and mix it back into the soup.
Notes
Serve with fresh bread and sprinkle with fresh herbs. For a creamier texture, blend a portion of the soup before serving.
