Description

A comforting and hearty slow-cooked chicken soup, perfect for chilly days and packed with flavors and nutrients.


Ingredients

Scale
  • 23 pounds boneless, skinless chicken thighs or breasts
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 6 cups chicken broth
  • 2 teaspoons thyme
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Fresh parsley for garnishing

Instructions

  1. Pour the chicken broth into the crockpot and add the diced onion, carrots, and celery.
  2. Place the chicken on top of the veggies.
  3. Sprinkle thyme, minced garlic, salt, and pepper over the chicken.
  4. Throw in a bay leaf for an aromatic touch.
  5. Cover and cook on low for about 6-8 hours, or until the chicken is tender.
  6. Before serving, shred the chicken and mix it back into the soup.

Notes

Serve with fresh bread and sprinkle with fresh herbs. For a creamier texture, blend a portion of the soup before serving.
