Description

A bright, lightly tangy homemade vinaigrette made with champagne vinegar, olive oil, honey, Dijon, and garlic.


Ingredients

  • 1/4 cup champagne vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 small garlic clove, finely grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon finely chopped fresh chives or parsley, optional

Instructions

  1. Whisk champagne vinegar, Dijon, honey, garlic, salt, and pepper for 30 seconds.
  2. Drizzle in olive oil slowly while whisking constantly until glossy and lightly thickened.
  3. Stir in chopped herbs, if using.
  4. Adjust seasoning with salt, vinegar, or water to taste.
  5. Rest vinaigrette for 5 to 10 minutes before serving.
  6. Toss with completely dry greens just before serving, starting with 1 tablespoon per person.

Notes

Use completely dry greens so the dressing clings properly.
Add oil gradually to prevent separation.
Refrigerate up to 7 days and shake before serving.
