Description

A one-pot pasta dish combining creamy goodness with a spicy kick, perfect for busy weeknights or gatherings.


Ingredients

  • 1 lb smoked sausage (sliced)
  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion (chopped)
  • 1 bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese (for garnish)
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced sausage, onion, and bell pepper; sauté until browned, around 5-7 minutes.
  3. Stir in the minced garlic; cook for an additional minute until fragrant.
  4. Add the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper; bring to a boil.
  5. Stir in the uncooked penne pasta; lower the heat and let it simmer until the pasta is tender, about 10-12 minutes, stirring occasionally.
  6. Remove from heat and mix in the grated Parmesan cheese until it’s melted and creamy.

Notes

For best results, garnish with extra grated Parmesan or fresh parsley and serve with a side salad or garlic bread.
