- 1/2 packet seafood mushrooms (or 1 packet enoki mushrooms)
- 1 slice American or cheddar cheese
- 1/3 cup kimchi
- 1/4 cup kimchi juice
- 1 instant noodle
- 3.5 cups chicken broth or water
- Sesame seeds (for garnishing)
- 1 tbsp gochujang (Korean red chili paste)
- 2 tbsp light soy sauce
- 1.5 tbsp sugar
- 2 tbsp gochugaru (adjust according to your heat preference)
- 4 cloves garlic (minced, grated, or crushed)
Instructions
- Prepare the sauce: In a bowl, combine all the sauce ingredients—gochujang, soy sauce, sugar, gochugaru, and garlic—and mix well.
- Arrange the ingredients: In a shallow pot, arrange the tofu, canned meat, sausages, onion, and mushrooms in a circular pattern, creating an inviting presentation. Place the kimchi and kimchi juice in the center, along with some chopped green onions.
- Add sauce and broth: Pour the prepared sauce in the middle and gently add the chicken broth, covering the ingredients.
- Simmer: Over medium heat, allow the pot to come to a simmer. Cover it with a lid and let it cook for 6-8 minutes, allowing the flavors to meld together.
- Cook the noodles: Reduce the heat to medium-low, then add the instant noodles to the center of the stew. Cook for an additional 3-4 minutes or until the noodles reach your desired doneness. Stir gently to ensure even cooking.
- Finishing touches: Place a slice of cheese on top and garnish with remaining green onions and sesame seeds. Serve the stew hot and enjoy every bite!
