Ingredients

Instructions

  1. Spiralize zucchinis and sprinkle lightly with salt. Let rest for 10 minutes, then pat dry to remove excess moisture.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil. Set aside.
  3. Heat a large skillet or wok over medium-high heat. Add oil, then sauté garlic and ginger for about 30 seconds until fragrant.
  4. Add bell pepper, carrot, and onion. Stir fry for 2–3 minutes until veggies begin to soften.
  5. Add zucchini noodles and pour in the sauce. Toss to combine and cook for another 2–3 minutes until zoodles are just tender.

Notes
