Description

A refreshing salad that combines sweet corn, creamy cottage cheese, and vibrant vegetables, perfect for summer barbecues or light lunches.


Ingredients

  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 cup cottage cheese
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and diced
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Cotija cheese for topping (optional)

Instructions

  1. In a large bowl, combine the sweet corn, cottage cheese, red onion, cilantro, and jalapeño.
  2. In a small bowl, whisk together the lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the corn mixture and toss gently to combine.
  4. Refrigerate for at least 30 minutes to let the flavors meld.
  5. Serve cold, topped with crumbled Cotija cheese if desired.

Notes

For the best flavor, use fresh sweet corn when in season. Adjust spice level by adding more or less jalapeño. Feel free to customize with additional veggies.
