Description

A quick and flavorful dish featuring tender chicken marinated in aromatic lemongrass and accompanied by savory sauces, perfect for busy weeknights or special gatherings.


Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3 stalks fresh lemongrass, trimmed and finely minced (or substitute with 3 tablespoons lemongrass paste)
  • 3 cloves garlic, minced
  • 1 small onion, finely sliced
  • 2 tablespoons fish sauce (or opt for soy sauce for a milder taste)
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced onion and stir-fry for 2-3 minutes until softened.
  3. Add the marinated chicken along with all the marinade to the skillet.
  4. Stir-fry for 8-10 minutes until the chicken is cooked through and caramelized around the edges.
  5. Taste the dish and adjust the seasoning, adding more fish sauce or sugar if necessary.
  6. Garnish with sliced chili and fresh cilantro, and serve with lime wedges on the side.

Notes

For best results, marinate the chicken for at least 30 minutes, or even overnight. Adjust spice levels according to your preference.
