Description

A cozy and comforting bowl of Vegan Garlic Chickpea Soup packed with flavors, perfect for busy weeknights or chilly evenings.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it turns translucent.
  3. Toss in the minced garlic and cumin, cooking for an additional minute until fragrant.
  4. Stir in the chickpeas and vegetable broth. Bring to a boil, then lower the heat and let simmer for about 10 minutes.
  5. Add the coconut milk and blend until smooth using an immersion blender or a regular blender.
  6. Season with salt and pepper to your taste.
  7. Serve hot, garnished with fresh parsley.

Notes

Feel free to substitute coconut milk with almond or cashew milk. For a chunkier texture, reserve some chickpeas and add them back after blending.
