Ingredients

- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 cup coconut milk
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it turns translucent.
- Toss in the minced garlic and cumin, cooking for an additional minute until fragrant.
- Stir in the chickpeas and vegetable broth. Bring to a boil, then lower the heat and let simmer for about 10 minutes.
- Add the coconut milk and blend until smooth using an immersion blender or a regular blender.
- Season with salt and pepper to your taste.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to substitute coconut milk with almond or cashew milk. For a chunkier texture, reserve some chickpeas and add them back after blending.
