Description

A rich, hearty chili that warms both body and spirit, perfect for gatherings and cool evenings.

Ingredients

Scale
  • 2 lbs ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 23 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Toppings: shredded cheese, sour cream, green onions, avocado slices, and tortilla chips

Instructions

  1. Prep Your Ingredients: Chop your veggies, drain your beans, and get everything ready.
  2. Brown the Meat: In a large pot, cook the ground beef (or turkey) over medium heat until browned. Drain excess fat if necessary.
  3. Sauté the Vegetables: Add diced onion and bell pepper to the meat. Cook until they soften, then stir in the garlic and sauté for an additional minute.
  4. Build the Base: Sprinkle in the chili powder, cumin, and paprika. Stir well to combine the spices with the meat and veggies.
  5. Add the Tomatoes and Broth: Pour in the diced tomatoes, tomato sauce, and beef broth. Stir until combined, bringing everything to a gentle simmer.
  6. Let It Simmer: Allow the chili to simmer for at least 30 minutes, stirring occasionally to prevent sticking.
  7. Add the Beans: Stir in the kidney and pinto beans, letting them heat through for about 10 minutes.
  8. Taste and Adjust: Season with salt, pepper, and cayenne as desired. Adjust to taste and let it simmer a bit longer if you want deeper flavors.
  9. Serve and Enjoy!: Ladle the chili into bowls and garnish with your favorite toppings!

Notes

This chili can be made gluten-free by ensuring your chili powder and broth are gluten-free. Feel free to adjust meat or beans based on dietary preferences.
