- 2 lbs ground beef (or ground turkey)
- 1 small onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 cans (15 oz each) kidney beans, drained & rinsed
- 1 can (15 oz) pinto beans, drained & rinsed
- 2–3 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Toppings: shredded cheese, sour cream, green onions, avocado slices, and tortilla chips
Instructions
- Prep your ingredients: Start by chopping your vegetables and measuring out your spices.
- Brown the meat: In a large pot, cook your ground beef or turkey over medium heat until browned. Drain excess fat.
- Sauté the vegetables: Add your diced onion, green bell pepper, and minced garlic, cooking until softened.
- Build the base: Stir in chili powder, cumin, paprika, salt, and pepper, letting the spices bloom for a couple of minutes.
- Add the tomatoes and broth: Pour in the diced tomatoes, tomato sauce, and beef broth, mixing well.
- Let it simmer: Bring the chili to a gentle simmer and let it bubble away for about 20 minutes, stirring occasionally.
- Add the beans: Mix in the kidney and pinto beans, stirring to combine. Simmer for an additional 10 minutes.
- Taste and adjust: Sample your chili and adjust the seasoning as desired.
- Serve and enjoy: Ladle into bowls and add your favorite toppings.
