- 600 g chicken breast, diced
- 150 g natural yogurt
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp Garam Masala
- 1 tsp sweet paprika
- 1 tsp salt
- 1 tbsp lemon juice
- 1 tbsp oil
- 2 tbsp butter
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 1 tsp coriander powder
- 1/2 tsp chili powder (optional)
- 400 g crushed tomatoes
- 150 ml cream (or coconut milk for lactose-free)
- 1 tsp sugar
- Salt to taste
- Fresh coriander for garnish
Instructions
- Marinate the Chicken: In a bowl, mix all marinade ingredients. Add the chicken, coat well, and let it marinate in the fridge for at least 30 minutes (or overnight for best results).
- Sear the Chicken: Heat the oil in a pan over medium heat. Add the marinated chicken and cook until golden brown, roughly 6–8 minutes. Remove the chicken and set aside.
- Prepare the Sauce: In the same pan, melt the butter and sauté the onion until translucent, about 5 minutes. Add garlic and ginger, cooking for an additional minute.
- Add Spices and Tomatoes: Stir in coriander, Garam Masala, and chili powder (if using). Pour in the crushed tomatoes and let it simmer for 10 minutes.
- Incorporate Cream: Stir in the cream and sugar, allowing it to simmer for another 5 minutes. Season with salt to taste.
- Combine Chicken and Sauce: Return the chicken to the pan, mixing well. Let everything simmer together for an additional 5 minutes.
- Serve: Garnish with fresh coriander and enjoy it with basmati rice or naan!
