- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 pound ground beef (or turkey)
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- Salt and pepper to taste
- 1 cup beef broth (or vegetable broth)
- Optional toppings: Shredded cheese, Sour cream, Chopped green onions
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and bell pepper, sautéing until they’re softened.
- Stir in the minced garlic, cooking for another minute.
- Add the ground beef (or turkey) and cook until it’s browned.
- Drain any excess fat from the pot.
- Mix in the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, and pepper.
- Pour in the beef broth and stir well to combine.
- Bring the chili to a simmer, then reduce the heat to low and let it cook for at least 30 minutes to allow the flavors to meld.
- Serve hot, topped with your choice of shredded cheese, sour cream, and green onions.
Notes
For a lighter option, swap ground beef for turkey. You can customize beans or spices to suit your taste.
