- 3–4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Rub olive oil over the chicken breasts and season them generously with salt and pepper.
- Heat a skillet over medium-high heat. Sear each chicken breast for about 5 minutes on each side, or until golden brown.
- Add in the minced garlic and cook for an additional 30 seconds until fragrant.
- Pour in the chicken broth, letting it simmer while you scrape any brown bits from the skillet’s bottom.
- Stir in the sour cream, combining everything well until it bubbles for around 5 minutes.
- Top each piece of chicken with the shredded Jack cheese, then transfer the skillet to the oven.
- Bake for approximately 15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions and a hint of paprika before serving.
Notes
For a different flavor, feel free to swap Jack cheese for Monterey Jack or Gouda. Make sure your skillet is hot enough when searing the chicken for a beautiful golden crust.
