  • 34 boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil
  • 23 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • Salt and pepper to taste
  • Chopped green onions and paprika for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts and season them generously with salt and pepper.
  3. Heat a skillet over medium-high heat. Sear each chicken breast for about 5 minutes on each side, or until golden brown.
  4. Add in the minced garlic and cook for an additional 30 seconds until fragrant.
  5. Pour in the chicken broth, letting it simmer while you scrape any brown bits from the skillet’s bottom.
  6. Stir in the sour cream, combining everything well until it bubbles for around 5 minutes.
  7. Top each piece of chicken with the shredded Jack cheese, then transfer the skillet to the oven.
  8. Bake for approximately 15 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and a hint of paprika before serving.

Notes

For a different flavor, feel free to swap Jack cheese for Monterey Jack or Gouda. Make sure your skillet is hot enough when searing the chicken for a beautiful golden crust.
