- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 1 cup beef or chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, cilantro, avocado
Instructions
- In a large pot, brown the ground beef or turkey over medium heat, making sure to drain any excess fat.
- Add the chopped onion and bell pepper to the pot and sauté until softened.
- Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and broth to combine all those wonderful flavors.
- Bring the mixture to a boil, then reduce the heat and allow it to simmer for about 20 minutes.
- Taste and season with salt and pepper as desired.
- Serve hot, and top each bowl with your choice of shredded cheese, sour cream, cilantro, or avocado for that finishing touch.
Notes
For extra flavor, let the soup simmer longer than 20 minutes. You can add diced jalapeños for more heat and experiment with toppings.
