- 1 lb ground beef (80/20 or 85/15)
- 1 packet taco seasoning
- 1 packet ranch seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes (undrained)
- 4 cups beef or chicken broth
- Shredded cheddar cheese (for garnish)
- Sour cream (for garnish)
- Tortilla chips (for garnish)
Instructions
- Heat a large pot over medium-high heat and add in the ground beef. Cook until it’s about halfway done.
- Add the chopped onion and cook for about 4 minutes until it softens. Then, toss in the minced garlic and cook for an additional 30 seconds.
- If needed, drain excess fat from the pot.
- Stir in the drained beans, corn, undrained tomatoes, and the broth. Mix well to combine all the ingredients.
- Add the ranch and taco seasoning packets, stirring thoroughly to ensure everything is seasoned. If you want a thinner soup, add a little water to reach your desired consistency.
- Simmer for 15 minutes, stirring once in a while to prevent sticking, until the flavors meld beautifully.
- Serve hot, garnished with shredded cheddar cheese, sour cream, and crunchy tortilla chips.
Notes
Customize the spices to your taste; consider adding diced jalapeños or a splash of hot sauce for a spicier kick.
