Description

A hearty and quick taco soup enriched with ranch seasoning, perfect for chilly nights or busy weeknights.


Ingredients

  • 1 lb ground beef (80/20 or 85/15)
  • 1 packet taco seasoning
  • 1 packet ranch seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes (undrained)
  • 4 cups beef or chicken broth
  • Shredded cheddar cheese (for garnish)
  • Sour cream (for garnish)
  • Tortilla chips (for garnish)

Instructions

  1. Heat a large pot over medium-high heat and add in the ground beef. Cook until it’s about halfway done.
  2. Add the chopped onion and cook for about 4 minutes until it softens. Then, toss in the minced garlic and cook for an additional 30 seconds.
  3. If needed, drain excess fat from the pot.
  4. Stir in the drained beans, corn, undrained tomatoes, and the broth. Mix well to combine all the ingredients.
  5. Add the ranch and taco seasoning packets, stirring thoroughly to ensure everything is seasoned. If you want a thinner soup, add a little water to reach your desired consistency.
  6. Simmer for 15 minutes, stirring once in a while to prevent sticking, until the flavors meld beautifully.
  7. Serve hot, garnished with shredded cheddar cheese, sour cream, and crunchy tortilla chips.

Notes

Customize the spices to your taste; consider adding diced jalapeños or a splash of hot sauce for a spicier kick.
