Description

Ingredients

  • 1 cup rice
  • 1 lb ground beef or chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 tbsp taco seasoning
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Sour cream, for serving

Instructions

  1. Cook the rice according to the package instructions until fluffy.
  2. In a skillet over medium heat, brown your choice of ground beef or chicken.
  3. Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir well and cook until everything is heated through, about 5-7 minutes.
  4. In serving bowls, layer the cooked rice, followed by the savory meat mixture.
  5. Top generously with shredded cheese, a few slices of creamy avocado, and a sprinkle of fresh cilantro.
  6. Serve with a dollop of sour cream on the side for an added richness.
