- 4 cups sweet potatoes, peeled and diced
- 1/2 cup butter, melted
- 1 cup brown sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup pecans, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Place the diced sweet potatoes in a pot of boiling water. Cook until tender, about 15-20 minutes. Drain and mash them.
- In a large bowl, combine the mashed sweet potatoes, melted butter, brown sugar, milk, vanilla extract, cinnamon, and salt. Stir until smooth and creamy.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- In a separate bowl, combine the chopped pecans with a sprinkle of brown sugar. Sprinkle this mixture over the sweet potato layer.
- Place the dish in the oven and bake for 25-30 minutes until heated through and the pecans are toasted to golden perfection.
Notes
Feel free to replace the pecans with walnuts or omit them for a nut-free version. This casserole can be made ahead and served warm.
