- 2 medium Sweet Potatoes
- 1 pound Ground Beef (or ground turkey or veggie crumbles)
- 1 medium Onion
- 4 cloves Garlic
- 1 cup Cottage Cheese (or Greek yogurt)
- ¼ cup Hot Honey
- 1 Avocado (sliced)
- 2 tablespoons Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash, peel, and dice the sweet potatoes into bite-sized cubes. Drizzle with olive oil and season with salt and pepper.
- Spread the sweet potato cubes on a baking sheet lined with parchment paper. Roast for 25 minutes, until tender and slightly caramelized.
- In a large skillet over medium heat, add olive oil. Add finely chopped onion and cook until translucent, then add minced garlic. Incorporate the ground beef, breaking it apart, and cook until browned (5-7 minutes).
- In a small bowl, mix honey with cayenne pepper or chili flakes to create the hot honey drizzle.
