- 2 large chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons cream cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the spinach, mozzarella, Parmesan, cream cheese, garlic, salt, and pepper until well blended.
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast.
- Generously stuff each pocket with the spinach and cheese mixture.
- Brush the chicken breasts with olive oil and season with salt and pepper for added flavor.
- Place the stuffed chicken breasts in a baking dish.
- Bake for 25-30 minutes, or until the chicken is fully cooked and the juices run clear.
- Allow to rest for a few minutes before slicing and serving.
Notes
For a lighter version, replace cream cheese with Greek yogurt. Feel free to experiment with different cheeses or greens.
