Description

A delightful dish featuring juicy chicken breasts stuffed with a cheesy spinach filling, perfect for any occasion.


Ingredients

  • 2 large chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons cream cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the spinach, mozzarella, Parmesan, cream cheese, garlic, salt, and pepper until well blended.
  3. Using a sharp knife, carefully cut a pocket into the side of each chicken breast.
  4. Generously stuff each pocket with the spinach and cheese mixture.
  5. Brush the chicken breasts with olive oil and season with salt and pepper for added flavor.
  6. Place the stuffed chicken breasts in a baking dish.
  7. Bake for 25-30 minutes, or until the chicken is fully cooked and the juices run clear.
  8. Allow to rest for a few minutes before slicing and serving.

Notes

For a lighter version, replace cream cheese with Greek yogurt. Feel free to experiment with different cheeses or greens.
