Description

A vibrant one-bowl meal featuring grilled chicken, sweet corn, and creamy avocado on a bed of fluffy rice.


Ingredients

  • 2 cups cooked rice
  • 1 lb grilled chicken, diced
  • 1 cup sweet corn
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup chopped cilantro
  • 1 lime, juiced
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked rice, diced grilled chicken, sweet corn, and red bell pepper.
  2. Add lime juice, smoked paprika, salt, and pepper. Toss until everything is well mixed.
  3. Serve the mixture in bowls and finish with avocado slices, topped with cilantro and any of your favorite optional toppings.
  4. Dig in and enjoy your flavorful creation!

Notes

Leftovers can be stored in the fridge for up to three days. You can freeze the rice and chicken mixture without the avocado for later use.
