- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- ½ teaspoon sea salt
- ¼ cup strawberry jam
- 1 tablespoon good quality balsamic vinegar
- 1 tablespoon water (extra if the mixture is too thick)
- ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
- 2 tablespoons crumbled goat cheese (optional)
- ¼ cup fresh strawberries (sliced, optional)
Instructions
- Heat the olive oil in a medium skillet over medium-high heat.
- Season the chicken breasts generously with salt on both sides and place them in the pan.
- Cook for about 4-5 minutes on one side until you achieve a golden crust. Flip the chicken and continue to cook for another 4-5 minutes, or until thoroughly cooked through.
- While the chicken is cooking, whisk together the strawberry jam, balsamic vinegar, and water in a small bowl until combined.
- When the chicken is nearly done, pour the sauce mixture over the top, nestling the chicken breasts into the sauce.
- Lower the heat and let the sauce simmer for 2-3 more minutes until it thickens slightly.
- Stir in most of the basil, reserving a little for garnish, and let it simmer for an extra minute.
- Carefully remove the chicken breasts from the pan and plate them. Pour the sauce over each piece, and if desired, sprinkle on some goat cheese and garnish with the remaining basil and sliced strawberries.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze the cooked chicken with the sauce for up to three months.
