Description

A delightful Southern dish featuring roasted sweet potatoes, maple syrup, and topped with mini marshmallows and crunchy pecans, perfect for any gathering.


Ingredients

  • 3 cups roasted sweet potatoes, mashed
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup mini marshmallows
  • 1/2 cup chopped pecans
  • 2 tablespoons melted vegan butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg. Mix until everything is smooth and well combined.
  3. Fold in the mini marshmallows gently to keep them intact.
  4. Transfer the mixture to a greased casserole dish, smoothing the top with a spatula.
  5. In another bowl, mix the chopped pecans with melted vegan butter and sprinkle this over the sweet potato mixture.
  6. Bake for 30-35 minutes, or until the casserole is heated through and the topping is golden brown.
  7. Let it cool slightly before serving to allow the flavors to set.

Notes

Feel free to substitute raisins with dried cranberries or use regular butter instead of vegan butter.
