- 3 cups roasted sweet potatoes, mashed
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup mini marshmallows
- 1/2 cup chopped pecans
- 2 tablespoons melted vegan butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg. Mix until everything is smooth and well combined.
- Fold in the mini marshmallows gently to keep them intact.
- Transfer the mixture to a greased casserole dish, smoothing the top with a spatula.
- In another bowl, mix the chopped pecans with melted vegan butter and sprinkle this over the sweet potato mixture.
- Bake for 30-35 minutes, or until the casserole is heated through and the topping is golden brown.
- Let it cool slightly before serving to allow the flavors to set.
Notes
Feel free to substitute raisins with dried cranberries or use regular butter instead of vegan butter.
