Ingredients

- 2 chicken breasts
- 1 cup of rice
- 1 cup of chicken broth
- 1 can of cream of mushroom soup
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Heat the olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper, then cook until golden brown on both sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Sauté until softened.
- Stir in the cream of mushroom soup and chicken broth, mixing until well combined.
- Return the chicken to the skillet. Cover and simmer on low heat for about 20 minutes, or until the chicken is cooked through.
- In the meantime, cook the rice according to package instructions.
- Serve the smothered chicken over a bed of fluffy rice.
Notes
Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to three months. Reheat gently on the stove with a splash of chicken broth.
