Description

A comforting dish featuring juicy chicken breasts in a creamy mushroom sauce, served over fluffy rice. Perfect for busy weeknights.


Ingredients

Scale
  • 2 chicken breasts
  • 1 cup of rice
  • 1 cup of chicken broth
  • 1 can of cream of mushroom soup
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then cook until golden brown on both sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté until softened.
  4. Stir in the cream of mushroom soup and chicken broth, mixing until well combined.
  5. Return the chicken to the skillet. Cover and simmer on low heat for about 20 minutes, or until the chicken is cooked through.
  6. In the meantime, cook the rice according to package instructions.
  7. Serve the smothered chicken over a bed of fluffy rice.

Notes

Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to three months. Reheat gently on the stove with a splash of chicken broth.
