Description

Ingredients

  • 2 large cucumbers
  • 4 slices of bacon
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain before chopping it into small pieces.
  2. Slice the cucumbers into thin rounds and transfer them to a large mixing bowl.
  3. Add the sliced red onion, crumbled feta, and chopped bacon to the cucumbers.
  4. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  5. Pour the dressing over the cucumber mixture and toss gently to combine.
  6. Garnish with fresh dill if desired.
  7. Serve immediately or chill in the refrigerator for about 30 minutes before serving.
