Ingredients

- 1 pound smoked sausage, sliced
- 4 cups potatoes, diced (about 4 medium potatoes)
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 cups kale or spinach (optional for garnish)
Instructions
- In a large pot, over medium heat, brown the sliced sausage until it’s nice and crispy.
- Add the chopped onion and minced garlic. Cook, stirring occasionally, until the onion becomes translucent.
- Stir in the diced potatoes and pour in the chicken broth. Bring this mixture to a boil.
- Once boiling, reduce the heat and let it simmer. Cook until the potatoes are tender, about 15-20 minutes.
- Pour in the heavy cream and season generously with salt and pepper to taste.
- If you’re using kale or spinach, add it in now and cook until it’s just wilted.
- Serve hot in bowls, and enjoy the cozy comfort of this delicious soup!
Notes
For thicker soup, mash some of the potatoes against the side of the pot after simmering. Feel free to add chopped carrots and celery for added flavor.
