- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded extra-sharp cheddar cheese
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a large pot, sear the Italian sausage over medium heat until it’s well browned. Once cool, crumble the sausage into bite-sized pieces.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onions turn translucent and fragrant.
- Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to let it simmer. Cook until the potatoes are tender, roughly 15-20 minutes.
- Stir in the heavy cream and the crumbled sausage. Allow this to cook for an additional 5 minutes, letting the flavors meld together.
- Mix in the shredded cheddar cheese, stirring until it’s fully melted and smooth. Taste the soup and season with salt and pepper to your liking.
- Serve the soup hot, garnished with chopped green onions if desired.
