Description

A warm, comforting bowl of sausage potato soup that’s rich, hearty, and packed with flavor, perfect for weeknight dinners or chilly weekends.


Ingredients

  • 1 pound Italian sausage
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded extra-sharp cheddar cheese
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. In a large pot, sear the Italian sausage over medium heat until it’s well browned. Once cool, crumble the sausage into bite-sized pieces.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onions turn translucent and fragrant.
  3. Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to let it simmer. Cook until the potatoes are tender, roughly 15-20 minutes.
  4. Stir in the heavy cream and the crumbled sausage. Allow this to cook for an additional 5 minutes, letting the flavors meld together.
  5. Mix in the shredded cheddar cheese, stirring until it’s fully melted and smooth. Taste the soup and season with salt and pepper to your liking.
  6. Serve the soup hot, garnished with chopped green onions if desired.

Notes

Leftover sausage potato soup can be stored in an airtight container in the refrigerator for up to 3-4 days.
