Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the Greens: Rinse the mixed greens thoroughly under cold water. Spin or pat them dry and add to a large bowl.
  2. Chop the Vegetables: Dice the cucumber, cherry tomatoes, and red bell pepper. Thinly slice the red onion.
  3. Mix it Up: Toss the chopped vegetables into the bowl with the greens. Add the avocado slices on top.
