Description

A quick and delicious rotisserie chicken salad perfect for weeknight meals or summer picnics.


Ingredients

  • 6 cups shredded rotisserie chicken or leftover cooked chicken breast
  • 1/2 cup diced celery
  • 1/3 cup diced red onion
  • 1/4 cup pickle relish
  • 1/4 cup plain Greek yogurt
  • 1/3 cup mayo
  • 2 tablespoons pickle juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Shred the chicken: Pulse the rotisserie chicken in a food processor until finely shredded and transfer to a large bowl.
  2. Add the veggies: Toss in the diced celery and red onion.
  3. Mix in the creamy goodness: Add pickle relish, Greek yogurt, mayo, Dijon mustard, pickle juice, salt, and pepper to the bowl.
  4. Toss it all together: Mix all the ingredients until well coated and combined into a creamy mixture.
  5. Serve or chill: Enjoy immediately, or refrigerate for a couple of hours for improved flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Freezing is not recommended for the entire salad.
