A quick and delicious rotisserie chicken salad perfect for weeknight meals or summer picnics.
Ingredients

- 6 cups shredded rotisserie chicken or leftover cooked chicken breast
- 1/2 cup diced celery
- 1/3 cup diced red onion
- 1/4 cup pickle relish
- 1/4 cup plain Greek yogurt
- 1/3 cup mayo
- 2 tablespoons pickle juice
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Shred the chicken: Pulse the rotisserie chicken in a food processor until finely shredded and transfer to a large bowl.
- Add the veggies: Toss in the diced celery and red onion.
- Mix in the creamy goodness: Add pickle relish, Greek yogurt, mayo, Dijon mustard, pickle juice, salt, and pepper to the bowl.
- Toss it all together: Mix all the ingredients until well coated and combined into a creamy mixture.
- Serve or chill: Enjoy immediately, or refrigerate for a couple of hours for improved flavor.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Freezing is not recommended for the entire salad.
