  • 2 tbsp Olive Oil
  • 2 tbsp Honey
  • 3 cloves Garlic, minced
  • 1 tbsp Dried dill or fresh dill
  • 1/2 cup Feta cheese, crumbled
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and trim the carrots, then cut them into sticks—about the size of your finger.
  3. In a mixing bowl, toss the carrot sticks with olive oil, honey, minced garlic, dill, salt, and black pepper until everything is well coated.
  4. Spread the coated carrots in a single layer on a baking sheet, ensuring they aren’t overlapping.
  5. Roast in the heated oven for 20-25 minutes, or until they are tender and beautifully caramelized.
  6. Once done, take them out of the oven and sprinkle crumbled feta cheese on top before serving.
