Description

A creamy, aromatic butter chicken recipe that’s perfect for weeknight dinners or special occasions, pairing well with naan or steamed rice.


Ingredients

  • 1 ½ pounds skinless, boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread
  • Steamed rice

Instructions

  1. In a bowl, combine chicken, 1 teaspoon salt, garlic powder, sweet paprika, half the curry powder, and Greek yogurt. Mix well and marinate for at least 30 minutes.
  2. In a large pan, heat vegetable oil over medium heat, add the marinated chicken, and cook until browned, about 5-7 minutes. Remove and set aside.
  3. Add 2 tablespoons of butter to the pan, and sauté minced garlic and diced onion until soft and fragrant, about 3-4 minutes.
  4. Stir in tomato sauce and sugar, and add remaining salt, black pepper, and curry powder. Simmer for about 5 minutes.
  5. Return chicken to the pan, slowly add heavy cream, and stir. Simmer on low heat until chicken is cooked through and sauce thickens, about 10 minutes.
  6. Finish by stirring in the last tablespoon of butter, cayenne pepper, and garam masala.
  7. Garnish with fresh parsley and serve hot with naan bread or steamed rice.

Notes

For a lighter version, substitute heavy cream with full-fat coconut milk. Adjust heat by modifying cayenne pepper to taste.
