Description

A comforting and creamy chicken pasta dish that is quick to prepare, perfect for busy weeknights.


Ingredients

  • 1 lb Chicken, diced
  • 1 cup Ricotta cheese
  • 8 oz Your favorite pasta (spaghetti, penne, or fusilli)
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • Salt & pepper, to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Cook the pasta according to package instructions, reserving a cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium heat and add minced garlic. Sauté until fragrant, about 30 seconds.
  3. Add the chicken, seasoning it generously with salt and pepper. Cook until browned and cooked through, roughly 5-7 minutes.
  4. Lower the heat and mix in the ricotta cheese, stirring until it melts and becomes creamy. If it’s too thick, add a bit of the reserved pasta water to loosen it.
  5. Combine the cooked pasta with the chicken and ricotta mixture. Toss it well to coat every piece.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

For added flavor, consider serving with garlic bread and a side salad. Leftovers can be kept in an airtight container for up to three days.
