- 1 lb Chicken, diced
- 1 cup Ricotta cheese
- 8 oz Your favorite pasta (spaghetti, penne, or fusilli)
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- Salt & pepper, to taste
- Fresh herbs (optional, for garnish)
Instructions
- Cook the pasta according to package instructions, reserving a cup of pasta water before draining.
- Heat olive oil in a skillet over medium heat and add minced garlic. Sauté until fragrant, about 30 seconds.
- Add the chicken, seasoning it generously with salt and pepper. Cook until browned and cooked through, roughly 5-7 minutes.
- Lower the heat and mix in the ricotta cheese, stirring until it melts and becomes creamy. If it’s too thick, add a bit of the reserved pasta water to loosen it.
- Combine the cooked pasta with the chicken and ricotta mixture. Toss it well to coat every piece.
- Serve hot, garnished with fresh herbs if desired.
Notes
For added flavor, consider serving with garlic bread and a side salad. Leftovers can be kept in an airtight container for up to three days.
