Description

A comforting Pumpkin Chili made with Italian sausage, sweet pumpkin, and hearty black beans, perfect for chilly evenings.


Ingredients

  • 1 pound Italian sausage
  • 1 can black beans, drained and rinsed
  • 1 can fire-roasted tomatoes
  • 1 can pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Olive oil for cooking

Instructions

  1. In a large pot, warm up a drizzle of olive oil over medium heat.
  2. Add in the chopped onion and minced garlic. Sauté until fragrant and softened, about 3-4 minutes.
  3. Toss in the Italian sausage and cook until browned, stirring occasionally.
  4. Stir in the chili powder, cumin, salt, and pepper, mixing everything well.
  5. Add black beans, fire-roasted tomatoes, pumpkin puree, and broth. Stir until evenly incorporated.
  6. Bring to a boil, then lower heat to simmer for about 30 minutes. Serve hot.
