- 1 pound Italian sausage
- 1 can black beans, drained and rinsed
- 1 can fire-roasted tomatoes
- 1 can pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Olive oil for cooking
Instructions
- In a large pot, warm up a drizzle of olive oil over medium heat.
- Add in the chopped onion and minced garlic. Sauté until fragrant and softened, about 3-4 minutes.
- Toss in the Italian sausage and cook until browned, stirring occasionally.
- Stir in the chili powder, cumin, salt, and pepper, mixing everything well.
- Add black beans, fire-roasted tomatoes, pumpkin puree, and broth. Stir until evenly incorporated.
- Bring to a boil, then lower heat to simmer for about 30 minutes. Serve hot.
