Description

A vibrant dish that fuses savory chicken with sweet pineapple, enveloped in comforting rice.


Ingredients

  • 1 lb Chicken breast, diced
  • 1 cup Pineapple chunks (fresh or canned)
  • 3 tbsp Soy sauce
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, minced
  • 2 cups Rice, cooked
  • 2 tbsp Vegetable oil
  • Green onions, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in minced garlic and ginger, cooking for about one minute until fragrant.
  4. Pour in the soy sauce and add pineapple chunks, stirring to combine.
  5. Add cooked rice to the pan, mixing until heated through.
  6. Serve hot, garnishing with chopped green onions.

Notes

For added flavor, marinate the chicken in soy sauce and garlic for 30 minutes prior to cooking. Use day-old rice for better absorption of flavors.
