- 1 lb Chicken breast, diced
- 1 cup Pineapple chunks (fresh or canned)
- 3 tbsp Soy sauce
- 3 cloves Garlic, minced
- 1 tbsp Fresh ginger, minced
- 2 cups Rice, cooked
- 2 tbsp Vegetable oil
- Green onions, chopped (for garnish)
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add diced chicken and cook until browned.
- Stir in minced garlic and ginger, cooking for about one minute until fragrant.
- Pour in the soy sauce and add pineapple chunks, stirring to combine.
- Add cooked rice to the pan, mixing until heated through.
- Serve hot, garnishing with chopped green onions.
Notes
For added flavor, marinate the chicken in soy sauce and garlic for 30 minutes prior to cooking. Use day-old rice for better absorption of flavors.
