- 2 cups vegetable or chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup tortellini (fresh or frozen)
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic. Sauté until softened.
- Pour in the vegetable or chicken broth and the can of diced tomatoes. Bring to a gentle boil.
- Toss in the tortellini along with the Italian seasoning. Cook according to package instructions until tender.
- Season the soup with salt and pepper to suit your taste.
- Finally, stir in the grated Parmesan cheese until it melts into the soup.
- Serve hot and garnish with fresh basil.
