Description

A comforting and quick soup made with cheesy tortellini in a flavorful broth, perfect for weeknight dinners.


Ingredients

Scale
  • 2 cups vegetable or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup tortellini (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic. Sauté until softened.
  3. Pour in the vegetable or chicken broth and the can of diced tomatoes. Bring to a gentle boil.
  4. Toss in the tortellini along with the Italian seasoning. Cook according to package instructions until tender.
  5. Season the soup with salt and pepper to suit your taste.
  6. Finally, stir in the grated Parmesan cheese until it melts into the soup.
  7. Serve hot and garnish with fresh basil.

Notes

Great with garlic bread on the side or topped with extra Parmesan.
