Description

A cozy, comforting potato soup inspired by a popular restaurant dish, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup bacon, cooked and crumbled
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. In a large pot, sauté the onions and garlic until soft.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Mash the potatoes slightly to thicken the soup.
  4. Stir in the heavy cream and shredded cheddar cheese until melted.
  5. Add salt and pepper to taste.
  6. Serve hot, garnished with bacon and green onions.

Notes

For a vegetarian option, replace chicken broth with vegetable broth and omit the bacon.
