- 4 large potatoes, peeled and diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup cheddar cheese, shredded
- 1/4 cup bacon, cooked and crumbled
- Salt and pepper to taste
- Green onions, sliced (for garnish)
Instructions
- In a large pot, sauté the onions and garlic until soft.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Mash the potatoes slightly to thicken the soup.
- Stir in the heavy cream and shredded cheddar cheese until melted.
- Add salt and pepper to taste.
- Serve hot, garnished with bacon and green onions.
Notes
For a vegetarian option, replace chicken broth with vegetable broth and omit the bacon.
