A comforting twist on classic lasagna, this One-Pot Lasagna Soup combines rich flavors and easy preparation for a satisfying meal.


Ingredients

  • 1 lb ground beef or Italian sausage (or plant-based ground meat for vegetarian)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 2 cups uncooked pasta (such as lasagna noodles, broken into pieces)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, sautéing until softened, about 5 minutes.
  2. Stir in the minced garlic and ground meat; cook until browned, draining excess fat if necessary.
  3. Mix in the crushed tomatoes, broth, broken pasta, Italian seasoning, along with salt and pepper. Bring the mixture to a boil.
  4. Lower the heat to a simmer and cook for about 15-20 minutes, until the pasta is tender.
  5. Fold in ricotta cheese until well combined with the soup.
  6. Serve hot, garnished with shredded mozzarella cheese and fresh basil.
