- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 can (28 oz) crushed tomatoes
- 4 cups vegetable or chicken broth
- 2 cups uncooked pasta (such as lasagna noodles, broken into pieces)
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, sautéing until softened, about 5 minutes.
- Stir in the minced garlic and ground meat; cook until browned, draining excess fat if necessary.
- Mix in the crushed tomatoes, broth, broken pasta, Italian seasoning, along with salt and pepper. Bring the mixture to a boil.
- Lower the heat to a simmer and cook for about 15-20 minutes, until the pasta is tender.
- Fold in ricotta cheese until well combined with the soup.
- Serve hot, garnished with shredded mozzarella cheese and fresh basil.
