Description

A comforting lasagna-inspired soup that combines rich flavors in one pot, perfect for busy weeknights.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground meat (beef, turkey, or Italian sausage)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups marinara sauce
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, cooked al dente
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Sauté chopped onion and garlic until fragrant.
  3. Add the ground meat, cooking until browned. Drain excess fat if necessary.
  4. Pour in the marinara sauce and broth, stirring to combine.
  5. Add the pasta and bring to a gentle boil; simmer until your noodles are tender.
  6. Stir in ricotta and half the mozzarella until melted and creamy.
  7. Season with herbs and adjust the salt and pepper to taste.
  8. Serve hot, topped with the remaining mozzarella and a sprinkle of fresh basil.

Notes

Undercook pasta slightly as it will absorb broth while standing. You can substitute ingredients based on preferences.
