- 1 lb ground turkey
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic; sauté until softened, about 2-3 minutes.
- Stir in the ground turkey and cook until browned, breaking it apart as it cooks.
- Add the diced bell pepper and let it cook for another 2-3 minutes until slightly tender.
- Mix in the orzo, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook until the orzo is tender and most of the liquid is absorbed, about 10-12 minutes.
- Serve warm and enjoy your meal!
Notes
Serve with freshly grated Parmesan cheese and a side salad for an extra touch. Leftovers can be stored in the fridge for up to three days or frozen for longer storage.
