- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic (minced)
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the sauce by mixing honey, minced garlic, and soy sauce in a small bowl.
- Chop the bell peppers and potatoes into bite-sized pieces.
- Combine the kielbasa, veggies, and olive oil in a large mixing bowl until coated.
- Add the honey garlic sauce and toss again to coat evenly.
- Spread the mixture on a large baking sheet in an even layer.
- Roast in the oven for about 25-30 minutes, stirring halfway, until veggies are tender and kielbasa is warmed through.
- Finish by sprinkling with fresh parsley or green onions before serving.
