Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach, chopped
- 1 cup mushrooms, diced
- 1 zucchini, sliced
- 2 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain.
- In a bowl, mix ricotta cheese, spinach, mushrooms, zucchini, oregano, garlic powder, salt, and pepper.
- Spread a thin layer of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles on top, followed by half of the ricotta mixture and a third of the mozzarella.
- Repeat the layers and finish with remaining noodles, marinara sauce, and mozzarella cheese.
- Sprinkle Parmesan cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly.
- Let it cool for 10 minutes before serving.
Notes
You can add other vegetables like bell peppers or eggplant for variety.
