Description

A quick and satisfying dish that marries fresh Mediterranean flavors with the convenience of a quesadilla.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir well to mix.
  2. Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on half of the tortilla and fold it over.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes or until the underside is golden brown.
  5. Flip the quesadilla and cook for an additional 3-4 minutes until both sides are crispy and lightly browned.
  6. Remove from the skillet, slice into wedges, and serve warm.

Notes

Serve with Greek yogurt or tzatziki sauce for dipping. Add a side salad for a complete meal. These quesadillas can be stored in an airtight container for up to three days.
