A quick and satisfying dish that marries fresh Mediterranean flavors with the convenience of a quesadilla.
Ingredients

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir well to mix.
- Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on half of the tortilla and fold it over.
- Heat a non-stick skillet over medium heat and add olive oil.
- Carefully place the filled tortilla in the skillet and cook for about 3-4 minutes or until the underside is golden brown.
- Flip the quesadilla and cook for an additional 3-4 minutes until both sides are crispy and lightly browned.
- Remove from the skillet, slice into wedges, and serve warm.
Notes
Serve with Greek yogurt or tzatziki sauce for dipping. Add a side salad for a complete meal. These quesadillas can be stored in an airtight container for up to three days.
